Lynnís Paradise Cafeís pancakes

1 cup whole-wheat flour
1-1/2 cups all-purpose flour
1/2 cup cornmeal
4 teaspoons sugar
3/4 teaspoon salt
1-1/2 teaspoons baking soda
3 eggs
1-1/2 cups milk
1-1/2 cups buttermilk
1/2 cup vegetable or canola oil

Sift whole-wheat flour, all-purpose flour, cornmeal, sugar, salt and baking soda into a large bowl. Set aside.

In a smaller bowl, whisk together the eggs, milk, buttermilk and oil. Add the wet ingredients to the dry ingredients. Stir together just until moistened. Batter will be slightly lumpy.

Cook pancakes until golden brown on both sides on a lightly greased hot griddle.

Serve with warm maple syrup or warm fruit sauces.  Makes 8 large pancakes.
