Freakishly Easy Chicken Mushroom Casserole



3 Boneless chicken breasts

1 T vegetable oil

2/3 cup chopped celery

1 can Cream of Mushroom soup (condensed)

2/3 cup white wine

2/3 cup grated cheese (swiss or cheddar works well)

2 cloves garlic smashed

1/4 tsp. salt

1/4 tsp. pepper

Heat oven to 350F. Cut chicken into 1" cubes and brown in vegetable oil in a hot skillet. When chicken is cooked through add soup, wine, garlic and celery. Bring to a boil stirring constantly. Remove from heat and add cheese. Pour into a 2 quart casserole and bake for 20 minutes (while you make the rice). Stir and serve.

Serve over rice.
