Broiled Tuna With Orange Sesame Glaze



1/2 cup orange juice

1 Tbsp. plus 1 tsp. soy sauce

1 tsp. Asian sesame oil

1/4 tsp. grated fresh ginger or powdered ginger

4 fresh tuna steaks (4-8 ounces each) (can substitute swordfish, pollack, cod, halibut)

  1. In a shallow pan, combine orange juice, soy sauce, sesame oil and ginger. (If using powdered ginger, dissolve it in soy sauce before combining with other ingredients.) Add tuna steaks and let marinate for 5 minutes. Turn fish frequently while marinating.
  2. Preheat broiler. Remove tuna steaks from marinade and arrange on a broiler pan; reserve marinade. Broil 3 to 4 inches from the heat for 4 to 5 minutes, turning steaks over once, broil another 4 to 5 minutes until fish is just opaque throughout but still juicy.
  3. Meanwhile, pour marinade into a small saucepan and boil over medium-high heat until reduced to about 1/4 cup, 1 to 2 minutes. To serve, spoon the glaze over fish.
