cup orange juice
plus 1 tsp. soy sauce
1 tsp. Asian sesame oil
1/4 tsp. grated fresh ginger or
4 fresh tuna steaks (4-8 ounces

(If using powdered ginger, dissolve it in soy
sauce before combining with other ingredients.)

Turn fish frequently while marinating.
- Preheat broiler. Remove
tuna steaks from marinade and arrange on a
broiler pan; reserve marinade. Broil 3 to 4
inches from the heat for 4 to 5 minutes, turning
steaks over once, broil another 4 to 5 minutes
until fish is just opaque throughout but still
- Meanwhile, pour marinade
into a small saucepan and boil over medium-high
heat until reduced to about 1/4 cup, 1 to 2
minutes. To serve, spoon the glaze over fish.
