Black Bean Salad Olé



1 can (16 ounces) black beans

1 1/2 cups fresh or frozen corn kernels

1/2 cup salsa

Juice of 1 lime

1/4 cup chopped fresh cilantro or parsley

  1. Drain the black beans. Rinse and drain again. Place in a serving bowl.
  2. Add the corn kernels. If using frozen corn, place in a strainer and run briefly under warm water to thaw, then drain well.
  3. Fold in the salsa, lime juice and cilantro. Serve immediately or cover and refrigerate until serving time.
