Spinach Salad With Mandarin Oranges



1 bag (10 ounces) ready-to-use spinach leaves

1 can (11 ounces) mandarin oranges

1/3 cup extra virgin olive oil

3 Tbsp. balsamic vinegar

For added crunch add:

1/2 cup sliced water chestnuts

1 whole carrot, sliced on diagonal

1 stalk celery, sliced on diagonal

  1. Rinse the spinach leaves and spin dry. Place them in a salad bowl. Drain the mandarin oranges, reserving the juice, and place the oranges in the bowl.
  2. Whisk together the oil, vinegar and 2 Tbsp. of reserved orange juice. Pour dressing over the spinach and toss gently to coat the spinach and oranges. Serve.
