Apricot Pork Kebabs



1 lb. boneless pork loin, cut into 1-inch cubes

1 10 oz. jar apricot preserves

4 Tbs. orange liqueur or orange juice

2 Tbs. butter, melted

  1. Stir together all ingredients well. Place in heavy plastic bag. Marinate at least 30 minutes.
  2. Thread pork onto 4 skewers (if using bamboo skewers, soak in water for 30 minutes to prevent burning.)
  3. Grill over hot coals 10-12 minutes, turning occasionally and basting often with the marinade.
Serve with white rice and snow peas.
