Sausage In Tomato Marsala Sauce



1 lb. sweet or hot Italian sausage

2 tsp. olive oil

1 clove garlic, minced

1 tsp. dried Italian seasoning

8 oz. fresh mushrooms, sliced

2 cups (8 ounces) tomato sauce

1/2 cup Marsala wine or cooking wine

  1. Prick holes into sausage with a fork or knife tip. Heat oil in a large non-stick skillet. Brown sausage links on all sides and cook until inside is no longer pink. Remove sausage from skillet and cut into 1 inch pieces and keep warm. Pour off any accumulated fat.
  2. Add garlic, herbs and mushrooms to skillet and cook, stirring frequently, until tender — about 5 minutes. Add tomato sauce, marsala, cooked sausage and simmer for about 10 to 12 minutes. Spoon over linguine and sprinkle with Parmesan cheese.

Serve with linguine and green salad.
