Sweet & Sour Pork Kabobs




2 Tbsp. pineapple juice concentrate

2 Tbsp. rice wine or apple cider vinegar

1 Tbsp. soy sauce

2 tsp. brown sugar

2 Tbsp. apricot jam


1 lb. boneless pork, cut into 1 inch chunks, use tenderloin or loin

1 cup pineapple chunks, fresh or canned

1 green pepper, stem and seeds removed, cut into 1 inch pieces

  1. In a small sauce pan, combine all sauce ingredients. Heat over medium heat and cook, stirring constantly until it thickens, about 4 to 6 minutes. Set aside.
  2. Thread pork on skewers (if using wooden skewers, make sure to soak in water for 15 minutes to prevent scorching), alternating with pineapple and green pepper.
  3. Brush kabobs with sauce and grill about 6 - 10 minutes per side until pork is cooked through. Brush with additional sauce as needed.

Serve with rice and steamed carrots.
