Pork Fajitas



1 lb. boneless pork loin, cut into 1/2 inch strips

2 Tbsp. lime juice

1 tsp. ground cumin

2 cloves garlic, minced

1/2 tsp. salt

1 Tbsp. vegetable oil

1 medium onion, sliced

1 pepper, green or red, stem and seeds removed, cut into thin strips

1/2 tsp. dried oregano

8 flour tortillas, warmed

1/2 cup prepared guacamole

3/4 cup prepared salsa, mild or hot

  1. Place pork in a plastic zipper lock bag with lime juice, cumin, garlic and salt. Let marinate at least 1 hour or overnight. Grill meat until browned and no longer pink inside.
  2. In a large sauté pan, heat oil over medium high heat. Add onions, pepper and oregano and cook for 8 - 10 minutes, stirring occasionally or until softened. Season with salt and pepper.
  3. Divide pork, onions and peppers among tortillas. Top each with some guacamole and salsa and roll up to seal.

Serve with black bean and corn salad.
