Cheese & Herb Stuffed Shrimp

INGREDIENTS

1 lb. large cooked shrimp (26-30/pound)

2 ounces low fat cream cheese

1/2 cup crumbled feta cheese (2 ounces)

1 tsp. lemon juice

1 1/2 tsp. fresh chopped dill or 1/2 tsp. dried dill weed

1/4 tsp. black pepper

1/4 - 1/3 cup minced fresh parsley

  1. Deepen the slit along the curved back of each shrimp, being careful not to cut the shrimp in half.
  2. In a bowl, mash cream cheese and feta cheese together with a fork. Mix in lemon juice, dill and pepper.
  3. Fill slit in shrimp with a rounded teaspoon of filling, mounding attractively. Roll the filled curve in parsley. Serve with toothpicks.

Serve as a cocktail nibble.
