Turkey Tacos

INGREDIENTS

l lb. ground turkey

1 Tbsp. oil

1 pkg. (1 1/2 ounce) taco seasoning mix

1/4 cup water

8 taco shells

1 - 2 ripe plum tomatoes, chopped

1 1/2 cups shredded lettuce

2/3 cup shredded cheddar cheese (reduced or full fat)

  1. Heat oil in a large non-stick skillet over medium high heat. Cook turkey, stirring frequently until no longer pink. Stir in seasoning and water. Simmer for 5 - 7 minutes.
  2. Spoon turkey mixture into taco shells. Top with tomatoes, lettuce and cheese.

Serve with Spanish rice and cucumber salad.
