Curried Chicken Kabobs

INGREDIENTS

INSTRUCTIONS

lb. boneless, skinless chicken breasts cut into 1 - 1 1/2 inch chunks

1/4 cup fruit chutney, such as mango

2 Tbsp. apple cider vinegar

2 Tbsp. water

2 tsp. curry powder

1/2 tsp. salt

Sauce

1/3 cup plain low fat yogurt

2 Tbsp. fruit chutney

1/2 tsp. lemon juice

1/4 tsp. curry powder

  1. Combine all ingredients, except chicken, in a small bowl. Place chicken in a plastic zipper lock bag and add marinade, turning to coat meat. Close bag and let marinate 30 - 60 minutes.
  2. Thread meat on skewers (if using wooden skewers, make sure to soak in water for 15 minutes to prevent scorching) and grill kabobs about 3 - 5 minutes per side. Serve with chutney dipping sauce (see #3 below).
  3. To make sauce, combine all sauce ingredients in a bowl.

Serve with couscous and buttered spinach.
