Beef and Vegetable Fried Rice

INGREDIENTS

INSTRUCTIONS

1 lb. lean ground beef

2 cloves garlic, minced

1 tsp. grated fresh ginger or 1/4 tsp. ground ginger

1 Tbsp. vegetable oil

1 red bell pepper, cut into 1/2 inch chunks

1 pkg. (6 oz.) frozen or fresh pea pods

3 cups cold, cooked rice

3 Tbsp. lite soy or teriyaki sauce

1 1/2 tsp. dark sesame oil

1/4 cup sliced scallions

  1. In a large non-stick skillet, brown ground beef, garlic and ginger over medium heat for 8 - 10 minutes or until beef is no longer pink, breaking beef into 3/4 inch pieces. Remove with slotted spoon and pour off drippings.
  2. In the same skillet, heat oil over medium heat. Add pepper and cook about 3 minutes until crisp tender. Add snow peas, rice, soy sauce, sesame oil and mix well. Return beef to skillet and heat through. Stir in sliced scallions before serving.

Serve with cucumber salad.
