Mexican Meatloaf

INGREDIENTS

INSTRUCTIONS

1 1/2 lbs. extra lean ground beef

1 can (4 ounces) chopped green chiles, drained

1 cup plain dry bread crumbs

1 cup mild salsa

1 egg

2 tsp. chili powder

2 tsp. Worcestershire sauce

1/3 cup reduced fat cheddar cheese (about 1 1/2 ounces), shredded

  1. Heat oven to 375 degrees F. Combine beef, chiles, bread crumbs, 3/4 cup salsa, egg, chili powder and Worcestershire in a large bowl. Mix well.
  2. Place in a lightly oiled 9 x 5 inch loaf pan and top with 1/4 cup salsa and cheese. Bake 55 to 65 minutes or until no longer pink inside and juices run clear.

Serve with baked potatoes and green beans.
