Beef Stroganoff



1 lb. beef tenderloin tips or sirloin cut into 1/4 inch strips

1 Tbsp. vegetable oil

1/2 lb. mushrooms, sliced

1/3 cup chopped onions

1 1/2 Tbsp. flour

3/4 cup reduced sodium beef broth

1/4 cup reduced fat sour cream

  1. Heat 2 tsp. oil in a large non-stick skillet over medium high heat. Add beef and cook 2 to 3 minutes or until outside is no longer pink. Remove and set aside.
  2. Heat remaining oil in the skillet and cook mushrooms and onions until softened, about 3 to 4 minutes. Add flour and cook 1 minute longer. Gradually add broth and cook until smooth and thickened, about 2 to 3 minutes. Add beef and heat through. Stir in sour cream and remove from heat.

Serve with noodles and steamed carrots.
