Quick Beef Chili



1 Tbsp. vegetable oil

1 lb. lean ground beef or boneless beef top sirloin, cut into 1/2 inch cubes

1 onion chopped or 2 Tbsp. dehydrated onion

2 cloves garlic, minced

1 Tbsp. chili powder

1 jar (8 oz.) mild or spicy salsa

1 can (15 oz.) kidney beans, drained

1/2 cup shredded cheddar cheese (reduced or full fat)

1/4 cup sliced scallions

1/4 cup sliced black olives

  1. In a large non-stick skillet, heat oil on medium high heat. Add meat and cook, stirring frequently until no longer pink. Add onion, garlic and chili powder and cook 2 - 3 minutes longer.
  2. Add salsa and kidney beans and simmer 10 minutes. Serve with cheese and scallions.

Serve with mashed potatoes and steamed broccoli.
