Beef Burritos



1/2 Tbsp. vegetable oil

1 lb. lean ground beef

1 Tbsp. chili powder

1/4 tsp. ground cumin

1/4 tsp. salt

1/4 tsp. pepper

1 package (10 oz.) frozen chopped spinach, de-frosted and well drained

1 cup prepared chunky salsa, mild or spicy

3/4 cup shredded Monterey Jack cheese (reduced or full fat)

8 medium flour tortillas, warmed

  1. In a large non-stick skillet, cook ground beef over medium high heat, stirring frequently until no longer pink, about 8 minutes. Pour off any accumulated fat.
  2. Add seasonings, spinach and salsa and cook for 5 minutes. Remove from heat and stir in cheese.
  3. To serve, spoon 1/3 - 1/2 cup beef mixture in center of tortilla. Fold bottom edge up over filling, fold sides into center and roll lengthwise to close in filling.

Serve with three-bean or green salad.
